Hi

I'm moving back to a vegetarian diet after being a meat-eater for 13 years.

Do you have any tips on what I should stock my cupboard with? What are essentials? staples? luxuries?

Hey, welcome to the forums. Nice to have you and great first question. As for veg staples essentials and luxuries? I have some of each in my fridge and cupboards. See a few below.

STAPLES
Beans (lots of them and all types: black, red, pinto, chickpeas, black eyed, lima)
rice
eggs
tortilla's
bread (for sandwiches)
veggies (tomatoes, avocado, broc, sweet potatoes, carrots, spinach, cauliflower, malanga (this is a Spanish veggie akin to potatoes) and loads more.Essentially whatever veggies are in season where you live)

LUX
Hmmn. This varies by taste and region. But i fancy good Mexican and Pasta dishes. I find delish recipes all the time online that i try. The next veg recipe i want to try is the Sweet Potato Black Bean Enchilada dish by Karina. (sounds and looks so yummy)

I also love a good Italian meal. To be honest i'm not the best cook. I am slowly but surely learning as i go. I do love the variety of dishes available to us vegheads and also the learning process.

How about you. What are some of your fave dishes and or recipes? And what sorts of veggies are in season where you live?
